Summer Kale Salad




This is for Arlene, in her quest to find new kale recipes.
Inspired by Diana and David! We recently had a wonderful summer night dinner at our friend and neighbors house (Diana and David) where they served an amazing kale salad). I never had raw kale - I'm glad I tried it!!!

For this salad:
5-6 Kale leaves (de-stemmed, rolled up and chopped)
1 small yellow tomato
olive oil ( just enough to coat leaves)
Feta cheese
Red wine vinegar
Salt and pepper to taste
Toss all ingredients together and enjoy!
If you feel like it - top some sautéed garlic. I tried the salad before and after garlic. It was great before the garlic - but it did add a little "umph".
I think it depends on how much you feel like "preparing" food. Before garlic - it's a no pan - no pain - easy salad to make.
